A public steam-cooking facility in Beppu's Kannawa district where visitors rent stone ovens fed by natural hot-spring steam at 100 degrees Celsius. Ingredients, seafood, vegetables, eggs, even puddings, cook without oil or seasoning, retaining pure flavor. The technique, called jigoku-mushi (hell steaming), has been used locally for over 300 years. Markets nearby sell pre-packaged ingredient sets ready for steaming.
